Serve up an incredibly tasty homemade taco soup for dinner tonight! This soup is hearty, it's filling, and it's full of savory flavor. Quickly combine simple ingredients, let simmer, and then relax around the table with good food and good company. Serve with a side of tortilla chips, queso fresco, and Rivera Family Recipe™ Salsa.
Ingredients

1-2 tbsp. butter or oil

3-4 garlic cloves, minced

1 onion, chopped

1 lb. ground beef

Salt & Pepper

2-3 tbsp of your favorite Mexican Seasoning

2 tsp. beef bouillon
-
2 tbsp. brown sugar
-
1 can kidney beans (drained)
-
1 can pinto or black beans (drained)
-
1 can corn (drained)
-
1 (28 oz) can of diced tomato
-
2-3 cups V-8 Tomato Juice (according to desired consistency)

Directions
Add butter or oil to a pan and brown the ground beef with the chopped onion and garlic. Make sure to salt and pepper to taste.
Add the diced tomato, beans, and corn to the beef mixture. Measure out 2-3 tbsp. of your favorite Mexican seasoning, according to your taste. Then add the beef bouillon and brown sugar. Stir and cook for 2-3 minutes to incorporate the flavor.
Next, add the V-8 juice. If you want a thicker consistency add less, if you want a thinner consistency add more. Cook for 15-20 minutes to heat through and let the flavor fully develop. Add more salt and pepper, if desired.
Serve hot with a side of corn tortilla chips, queso, and Rivera's salsa.
