A patriotic twist on a traditional seven-layer dip. Bright red cherry tomatoes, Monterey Jack cheese, blue corn chips, and sour cream help create an image of Old Glory. Layered underneath the red, white and blue are refried beans, beef, and rice. It's a perfect party dish but also hearty enough to serve as main course. Celebrate the holiday with a festive and delicious dish!
Ingredients

20 oz. cherry tomatoes, sliced in half

1 red onion, chopped

6 garlic cloves, chopped

1 red pepper, chopped

Juice of one lime

1 (28 oz.) can refried beans

3/4 cup water

1 (16 oz.) jar of Rivera's Family Recipe™ Salsa — mild, medium, or hot

2 cups cooked white rice
-
1 1/2 lb. ground beef
-
1 tbsp. Mexican seasoning
-
1 tbsp. brown sugar
-
1/3 cup fresh cilantro, chopped
-
Blue corn chips
-
White corn chips
-
1-2 cups Monterey Jack cheese, grated (to taste)

Directions
Combine cherry tomatoes, half of the chopped garlic, half of the chopped onion, red pepper, lime juice, and salt & pepper in a bowl. Then pour into a foil lined sheet pan and roast in the oven at 400 degrees for 12-15 minutes. Remove from the oven and let cool for a few minutes.
Meanwhile, heat the refried beans in a saucepan. Stir in the water and cook until heated through. Spread the warmed beans as the first layer on the bottom of a lasagna sheet pan (or a sheet pan with deep sides).
Pour a jar of Rivera's salsa over the refried beans and spread evenly. Add a layer of cooked white rice and spread evenly.
In a heated skillet brown the ground beef with the remaining garlic and onion. Add some salt and pepper to taste. When the beef is browned, add the Mexican seasoning, brown sugar, and cilantro. Let the meat cool for a few minutes and pour over the rice layer in the sheet pan. Spread evenly.
Use the blue corn chips to create the blue corner of the "flag". Create the red and white stripes with the white corn chips and the cherry tomato mixture. Sprinkle the white corn chips with grated cheese, then place in the oven for 5 minutes to melt.
Dollop sour cream onto the blue chips to create stars. Serve warm.
