1/2 cup creme fraiche or heavy cream

1/4 cup shaved parmesan cheese

3/4 cup ham, small cubes

2-3 tbsp. chives, chopped

Directions
Preheat oven to 350 degrees. Coat a pie pan with nonstick spray. Spread the pie crust dough in the pie pan, crimping the edges. Poke across the crust bottom with a fork to avoid bubbling when baking. Place in the oven to bake for 8-10 minutes.
Meanwhile, combine the eggs, cream, cheese, chives, and salt and pepper in a bowl. Allow the baked pie crust to cool for a few minutes, then add half of the ham cubes to the bottom of the pie crust. Pour the egg mixture over the ham cubes. Spread the remaining ham cubes onto the top of the egg mixture.
Cover the edges of the pie crust with aluminum foil to prevent burning. Place the quiche in the oven and cook for 40-45 minutes. The foil can be removed the last 5-10 minutes of baking. The quiche is done when it becomes lightly brown on top and doesn't wiggle when moved. Serve with fruit, veggies, toast, bagels, salad, sour cream, or Rivera's Family Recipe Salsa.
