Chorizo Breakfast Burritos
It's tasty, it's filling, it's the perfect way to start the day! But the satisfaction doesn't have to end with breakfast—you can create this dish at any time, day or night, to satisfy hunger or cravings. Fresh, homemade, and yummy to the tummy. Pair with Rivera's salsa and sour cream for the best flavor!
1/2 lb. chorizo sausage, casings removed and crumbled
Small red onion, chopped
1 orange or red pepper, seeded and diced
6 eggs, beaten
1 cup cheddar cheese, grated
4 Tortillaland®, Ready-to-Cook, flour tortillas
Rivera's Family Recipe™ Salsa (mild, medium, hot, or verde)
Generously coat a large frying pan with cooking spray. Cook and stir chorizo over medium high heat until well browned and crumbled. Add onion and pepper and continue cooking until tender.
Beat eggs in a bowl and add to chorizo mixture. Reduce heat to medium-low and continue stirring until eggs are scrambled and no longer runny.
Heat a non-stick pan to medium heat. Place uncooked tortilla in pan and cook until slightly golden and puffy, about 30-60 seconds. Turn the tortilla over and cook for another 30-60 seconds. Remove tortilla from pan, spoon chorizo mixture into the middle of each tortilla, and top with shredded cheddar cheese. Roll up like a burrito. Serve with Rivera’s Salsa and sour cream.
