Ingredients

1/2 lb. chorizo sausage, casings removed and crumbled

Small red onion, chopped

1 orange or red pepper, seeded and diced

6 eggs, beaten

1 cup cheddar cheese, grated

4 Tortillaland®, Ready-to-Cook, flour tortillas

Rivera's Family Recipe™ Salsa (mild, medium, hot, or verde)

Directions
Generously coat a large frying pan with cooking spray. Cook and stir chorizo over medium high heat until well browned and crumbled. Add onion and pepper and continue cooking until tender.
Beat eggs in a bowl and add to chorizo mixture. Reduce heat to medium-low and continue stirring until eggs are scrambled and no longer runny.
Heat a non-stick pan to medium heat. Place uncooked tortilla in pan and cook until slightly golden and puffy, about 30-60 seconds. Turn the tortilla over and cook for another 30-60 seconds. Remove tortilla from pan, spoon chorizo mixture into the middle of each tortilla, and top with shredded cheddar cheese. Roll up like a burrito. Serve with Rivera’s Salsa and sour cream.
